This Season's Harvest: Sonata Strawberries Are In

Freshly picked strawberries at White House Farm, Ramsey

The first Sonata strawberries of the season have come in from White House Farm in Ramsey, and — as always — we picked and potted within hours, not days.

Sonata is a variety we keep coming back to: it holds its shape better than most in the pan, so the preserve sets glossy rather than jammy, with whole soft pieces of fruit still visible in the jar. This year's plants had a warm, dry June behind them, which farmers there tell us means smaller, more concentrated berries — less water, more flavour.

We've also had a small first pass of Marshmello strawberries, a rarer, paler variety that's too delicate to survive a supermarket supply chain but is glorious blended with Woodland strawberries into our 'Marshmello' preserve. Both are in the shop now, in the small batch they came in — once a jar's numbered run sells out, it's gone until next season.
